Waldorf Salad

This amazing salad I invite you to prepare because it is very very goooood. Flours, textures and different tastes, combined perfectly in a complete salad.
I cannot stop to praise this Waldorf salad.
For this one I will not give you exact quantity's because is up to everyone's taste. The important thing is that it must be a balance between the ingredients and to be to your taste, so it's up to you how much or less you add from the ingredients.




This is what I use for this salad:
  • celery root, a medium one, not too big
  • a celery stock
  • 1 sour apple
  • a handful of nuts
  • a few raisins
  • half of chicken breast, boiled in water with salt, pepper and a bay leaf
  • a couple of green leaf salad (romano salad)
  • parsley
  • 200 gr homemade mayonnaise
  • 2 tablespoon yogurt
  • 1 teaspoon mustard
  • lemon juice
  • salt and pepper by taste

Directions are very simple like any other salad and the result is amazingly tasty.

  • roast the nuts in a skillet on the stove, just for a few minutes 
  • the celery root I peal and grated, so as the apple, but this one I let it with the skin
  • the salad, parsley and the celery stock I have chopped in small pieces with the knife
  • add some lemon juice to prevent oxidation's
  • the mayonnaise I have mixed with the mustard, salt and pepper and pour this dressing over the vegetable
  • add in the bowl the roasted nuts, a few raisins and the chicken meat cut it into cubes
  • mix everything and add salt and pepper
  • the salad is ready, all you need is to keep it in the fridge for at least 30 min before serve, but this only if you not dig in right away....:))
