Raffaello cheesecake

This cheesecake is amazing dessert is one of my favorite, maybe because of the taste and also because of the fact that it doesn't need baking.  The coconut flakes give a distinct taste, a creamy sweet one, and the base with crackers and butter is delicious. As decoration you can use Raffaello candy that you can by from any store, but I use ones made by me at home.

Ingredients

Crust: 250 gr crackers, 150 gr butter
Filling: 400 ml heavy cream unsweetened, 500 gr cream cheese, 350 gr powder sugar, 50 gr coconut flakes, 20 gr gelatin granule, 1 tablespoon of grated lemon zest, vanilla essence
Decorations: Raffaello candy, coconut flakes

Directions

  • crush the crackers with a rolling pin or with the food processor, depending what is easy for you, until fine crumbs ,
  • melt the butter in the microwave oven, and mix it with the crackers crumbs
  • I'll use a spring form pan with the diameter of 22 cm, and lined with plastic sheet 
  • press the crumb mixture at the base of the spring form pan, press it well with a spoon or a spatula, and refrigerate
  • pour the gelatin in a little bowl and cover with cold water, let it for a few minutes to hydrate
  • in a sauce pan pour the heavy cream, the sugar and the coconut flakes, and heat up without boil on low heat on the stove
  • melt the gelatin in the microwave for 10 sec
  • take the cream of the stove and add in melted gelatin and mix well
  • In a larger bowl mix the creme cheese, the lemon zest and the vanilla essence, using the electric mixer, and add the mixture prepared before (with the heavy cream, coconut flakes....)
  • mix well 
  • pour this mixture over the chilled crust and refrigerate until firm, for at least 3 hours
  • decorate with Raffaello candy and coconut flakes

The dessert must be kept in the refrigerator until you serve it.
