I chose the roast the red peppers in the oven, lined up the oven rack with a pan underneath filled with water, this way if some juice drips from the peppers will land in the water and I will not smoke out the kitchen. You can also roast the red peppers on a grill with charcoal and no matter how you roast this peppers the salad will be amazing.
- 1 kg red peppers
- 2 tablespoon of sunflower oil or olive oil
- 2 tablespoon apple cider vinegar
- salt
- 2-3 garlic cloves
- parsley
- roast the peppers in the oven for about 30 min until the skin is all wrinkle and the peppers look smooshy
- let them stem in a bowl covered with a plastic foil to cool
- peel the skin and remove the tail and the seeds
- chop them in large pieces
- I made the dressing mixing the oil with the vinegar and a little bit of salt
- pour this dressing over the peppers and chop the garlic and the parsley
- mix everything
