String beans with tomatoes and garlic

I end up at the conclusion that the simple things are the best and this is the case of this dish, is very simple but amazing because is very tasty and it feel like summer ....sun, colors, freshness, taste, smell, aroma....this is how I describe it, you?





Ingredients 
500 gr string beans
1 carrot
a slice of celery root
1 onion
1 bell pepper
3 tomatoes
4-5 garlic cloves
parsley
salt and pepper to paste
2 tablespoon of vegetable oil

Directions
  • i have cut the ends of the string beans, washed well, cut it in smaller pieces and boiled in water until softens
  • with the food processor I grated the carrot, celery and onion, the bell pepper chopped with the knife finely
  • in a pot add 2 tablespoon of oil and cook a little bit the carrot, onion, celery and the bell pepper and when the string bean is  softened drained of water add it over the vegetable
  • add some water in witch the beans has boiled and let it boil so the vegetable softens soo
  • i have grated the tomatoes without the skin and boiled in a different pot to reduce the liquid
  • when the vegetable are softens add salt and pepper to your taste and also add the tomatoes so that the flavors combine 
  • add the garlic cut in smaller pieces and boil for 5 more min
  • add the parsley and the meal is ready
You can serve this meal as it is with a salad aside or next to grilled chicken breast.
