Yogurt pie

         
Wonderful pie with yogurt, who does not like it! I admit that we love it,  which is why today a yogurt and raisins pie has appeared on the Happy Dish Club website,  among other wonderful dishes.
It is not difficult to prepare, we do not need who knows-what sophisticated ingredients, but the result, yyyeeeiiii result is DELICIOUS !!
I used thin sheets of pie (phyllo pastry), that we find in almost all supermarkets and have a very good price, yogurt with more fat, many eggs and sweetened whole composition with sugar and give it flavor with vanilla sugar and raisin, because without raisin is not yogurt pie.

Choux a la creme

These delicate Choux a la creme or you may know it like Cream Puffs I prepare them dearly, especially when I make them in miniature. They are very sweet and cute, and if you prepare them for kids party I assure that children will love them also us, the adults too.
When I was  a kid, my mother filled them only with whipped cream and were just as good, from my mother hands came out the best desserts and dishes in the hole wide world.



Diplomat birthday cake

Holidays without cake it can´t be, and because so many dishes with pork will abound Romanians tables, I thought that a fresh and cooling cake, like Diplomat cake, will be a very good idea. I made it today without gluten, participating this way to the campaign ¨A sweet Cristhmas and gluten free with Dr Schar¨, and othet delightfull and decicios recipes I will find  on Facebook Dr. Schar.





Raw beetroot salad

So much freshness, such beautiful color in one dish cheered up by a raw beetroot salad!
So, let's prepare this salad!




Ingredients

- 3 beetroots
- a little horseradish (optional)
- salt
-2 tablespoons of vegetable oil/olive oil, 1 teaspoon vinegar and 1 teaspoon honey - for the dressing
(you can double this quantities as I did)

  Directions
  • peal the beetroot and wash it well
  • grate the beetroot
  • prepare the dressing with 2 tablespoons of vegetable oil, 1 teaspoon vinegar and 1 teaspoon honey
  • for more you can double the quantities
  • pour the dressing over the salad
  • mix everything together and let in the  refrigerator for 15-20 min
  • serve the salad with a little bit of finely grated horseradish 

Simple, right ? And you can serve it with pea stew and chicken meat.

Pea stew with chicken meat

Eating Pea stew with chicken meat is among the most common and the most prepared in my kitchen, something makes me think that maybe yours too. Not surprised me because it is so simple to prepare, it is not expensive and is very good.
Especially if you find fresh peas at the market because that is sweet and fresh, frozen one is not too bad too.
Besides, I like to put peas and many other vegetables in it, the list below as you see I have not stingy with them, why would I do it ?! So good and give so much taste.
As I had chicken meat I fry it a little in a pan, to gain color and not have blood, but you can boil the meat separately if you like. Besides the dish, salad you need for a perfect combination and if it is a little sour, meaning a beetroot salad or one of pickles the better.

Ingredients for Pea stew with chicken meat
  • 1 kg frozen peas
  • a large onion and because I had a couple of green one I added that too
  • 1 carrot,
  • a slice of celery root
  • 1 parsley root
  • one bell pepper
  • 200 grams of peeled and chopped tomatoes , tomato juice or 2 tablespoons tomato paste
  • one chicken breast
  • salt pepper
  • 1 bay leaf
  • fresh dill
  • 2-3 tablespoons oil
  • 1 l water or broth

In a saucepan put a little bit of oil to heat, then add all the vegetables to softens, but not burn. After about 5 minutes and add the peas and fill with water or broth and let simmer.
If you purchased peas that is hard to a boil, is best to boil separately until soften and after this add it over the vegetable, or you'll get bored boiling it. It happened to me a few times, I bought a hard one and even if I boil it for more than an hour or so, it still seemed hard. So you should always buy that one that you bought before.
Meanwhile, in a skillet with a little hot oil, fry the chicken breasts cut into smaller pieces and seasoned well.
When peas and vegetables are boiled, season with salt, pepper and add the tomatoes and roasted meat.
Leave food on the fire until the sauce reduces because I do not like thicken the sauce with flour.
Finally sprinkle dill.

Homemade Ladyfingers

Very easy to prepare and delicious delicacy with hot chocolate, coffee or tea.



Chicken stew

This dish is among the traditional ones, it is very easy to prepare and is very tasty. I used chicken legs but you can use also different parts of the chicken in this meal.
The recipe you can watch it here, for the moment has English subtitle, but soon I'll do an English version of it.


Ingredients for Chicken stew
  • 3 chicken thighs
  •  250 ml of tomato sauce
  •  2 tablespoons flour
  •  1 onion
  •  4-5 cloves garlic
  •  salt and pepper to taste
  •  little bit of oil and water


Chicken legs I have washed and cut them into smaller pieces.
I fried them in a pot with a bit of oil on all sides.
I added over the meat chopped onion and after it softened slightly add the garlic.
I seasoned lightly with salt and pepper and added water. I let the food simmer, covered with lid, stirring and turning meat occasionally, and if needed add a little bit of water until the meat is well cooked.
Flour blended it in tomato sauce and over the meat after was cooked, add the tomato sauce and let it simmer a bit on low heat, stirring and being careful not to burn. The sauce should cover slightly the meat.

Shrimps with spicy sauce

For some time shrimps won us with their sweet taste and the fact that it prepare in minutes. A quick spicy sauce cover the shrimps and complete this meal.
I invite you to try it right now !!!


Ingredients
500 gr shrimp
a few cloves of garlic (9-10 small cloves)
hot pepper as desired
sweet paprika
fresh parsley
salt and pepper
50 gr butter
olive oil

I cleaned up the shrimp, but they can be used as they are.
Heat up some olive oil in a pan and put the diced butter.  The pressed garlic lands in the pan with chopped  hot peppers, paprika, salt and pepper.
The shrimp now joins the sauce in pan, and keep it 1 min on each side.
Turn off the heat, cover the pan with a lid for a one more minute.
Finally add the parsley and shrimp with spicy sauce is ready to serve.

Roasted red peppers salad

There is no real summer without the roasted red peppers salad. Even if heat is blazing outside, and the kitchen seems to be a land of fire, the pleasure of eating this wonderful salad with roasted peppers is higher than the heat torment.
I chose the roast the red peppers in the oven, lined up the oven rack with a pan underneath filled with water, this way if some juice drips from the peppers  will land in the water and I will not smoke out the kitchen. You can also roast the red peppers on a grill with charcoal and no matter how you roast this peppers the salad will be amazing.


Ingredients
  • 1 kg red peppers
  • 2 tablespoon of sunflower oil or olive oil
  • 2 tablespoon apple cider vinegar
  • salt
  • 2-3 garlic cloves
  • parsley
Directions
  • roast the peppers in the oven for about 30 min until the skin is all wrinkle and the peppers look smooshy
  • let them stem in a bowl covered with a plastic foil to cool
  • peel the skin and remove the tail and the seeds
  • chop them in large pieces
  • I made the dressing mixing the oil with the vinegar and a little bit of salt
  • pour this dressing over the peppers and chop the garlic and the parsley
  • mix everything

Cheese puffs tasty appetizers to share with friends

About this Cheese puffs is not too much to say about the preparations because all you have to do is add all the ingredients into a blender and mix everything together in order to form a batter.
This is how I do it!

Ingredients for 11 pieces of Cheese puffs

  • 1 egg
  • 1/2 cup of graded cheese, you can use fresh cheese also
  • 170 gr cornstarch
  • 180 ml olive oil, but with sunflower oil taste even better
  • 160 ml milk
  • 1/2 teaspoon salt
  • and some sesame seeds

Like I said put all the ingredients in the blender and mix.

Preheat the oven at 390 F, grease the muffin tin and pour the batter in it.
Bake for 18-20 min.
Let it cool until serve it.
Works well with beer and friends.
That's it, easy, fast and tasty!!

Pilaf with vegetables

I like to make Pilaf with vegetables because it is easy to make, it is creamy and you can serve it with Roasted red pepper salad in the summer or with pickled cucumber in the winter. It is so simple and I like it so much. Too many complications in this life so why to complicate what we eat.
My grandma use to make pilaf when she sacrifice some chicken from her own yard, the pilaf use to be yellow from the bird fat and it was delicious. I do it with not so much fat, in fact I add only 2 tablespoon of sunflower oil, and to boil the rice I use water or vegetable soup, rarely do I use chicken soup.


Ingredients for 6-8 servings of Pilaf with vegetables
  • 300 gr rice
  • 2 carrots
  • 3 small onion or one large one
  • A slice of celery root
  • 1 bell pepper
  • 2 tomatoes
  • fresh green parsley
  • salt and pepper by taste
  • 2 tablespoon vegetable oil
  • water or vegetable soup
  • Carrots, onion and celery root I have peal, washed and using food processor I have chopped them. If you don’t have a food processor use the grater for the carrots and the celery. For onion just chop it with the knife.
  • The bell pepper must wash it, remove the seeds and chop it with the knife.
  • In a pot add 2 tablespoon of oil to heat up and add the vegetable and add some water to steam, this way you will not have stomach burns. Let them to cook for a few minutes and add the rice.
  • Add 600 ml water (double the quantity of the rice) and let it boil, at low heat, and carefully not to burn it. If needed add a little bit more water.
  • I have grated the tomatoes also, removing this way the skin of them, and when the rice it is done add them in the pot.
  • Add salt and pepper to your taste and boil for a few more moments.
  • At the end add fresh chopped parsley.

Caramel filling cake

It is amazing how much  happiness can bring me the baking and cooking desserts and this was the case of this Caramel filling cake. I enjoy myself by thinking how my husband will appreciate the sweet tasty caramel filling of this cake. The directions are very easy to follow, a few steps for a great cake. The only thing that can create a little bit of upset is that you cannot serve the cake right away, it need a day so that the crust sheets to become soft in order to slice it.



Ingredients for the crust sheets  of the Caramel filling cake
  • 150 gr sugar
  • 150 gr butter
  • 10 gr baking powder
  • 1 egg
  • 2 tablespoon sour cream
  • 3 tablespoon milk
  • 420 gr sifted flour

For the filling I use
Caramel filling cake
  • 100 gr sugar
  • 80 gr cornstarch
  • 500 milk
I'll do the caramel with 2 tablespoon of sugar and 200 gr butter

Directions
For the crust sheets mix the egg with the sugar, sour cream, room temperature butter. Add the baking powder and the milk. Now start adding flour bit by bit, mix with the whisk first and hands later until the dough doesn't stick to the hands.
Split it now in 2 equal parts and with a rolling pin roll them in 2 rectangular sheets  (23 x 33 cm), and bake them on the back of the tray in the preheated oven at 180 degree C for 10-15 min, until slightly golden on the sides.
Let them cool.
For the filling prepare first a pudding by mixing in a sauce pan the sugar and the cornstarch. Add now the cold milk. On the stove, on low heat, cook this mixture, stir in constantly until thickens. Let it aside and prepare the caramel part.
In another sauce pan add 2 tablespoon sugar and let it caramelize on low heat, until the sugar became golden. Carefully not to burn it because will have a bad taste. When all the sugar is dissolve add the butter and boil this mixture for a few minutes.
Now is time to combine the two parts together and to do that add the caramel part in the pudding made earlier using the whisk. Let it cool completely.
Assembly now the desserts by placing one baked crust sheet on a suited tray, spread the filling in one layer and place the other sheet on top.
Now comes the part about patience, because you need to place this cake in a cold place, in the refrigerator is the best until the next day, so the crust sheets will have time to softens.
The fun part come when you can serve the sliced cake. For a nicer appearance powder with sugar and SERVE. Enjoy a great cake.

Maybe in this post I use too many words and you can be intimidated in preparing the cake but the video is more helpful and I hope it will be to your use.

Potatoes gratin

I've made this potatoes gratin so often and I wanna show you how I do it, because is fast, easy and tasty. You don't need too much ingredients and with a salad or even with pickled cucumbers and the meal is done.
Is very versatile this meal and your imagination can serve it well in this case if you want to add more flavors in and I can give you some little ideas. So you can add pieces of bacon, some garlic or onion, on top a little bit of tomatoes sauce/ketchup.
Me personally I like it basic but feel free to improvise if you like.


Ingredients for Potatoes Gratin
1 kg potatoes
200 ml double cream
200 ml milk
50 gr butter
3 eggs
200 gr grated cheese
rosemary, salt and pepper

Directions
First must boil the potatoes, with the skin on, half way throw.
After this step, peal the potatoes an slice them 1 cm thick.
I've made a sauce with beaten eggs, cream, milk, rosemary, half of the grated cheese, salt and pepper.
Butter well a tray (21 x 26 cm) and place in one layer slices of potatoes. Sprinkle some of the grated cheese over and pour some of the sauce ether.
Add another layer of potatoes, the rest of the sauce and a little bit of grated cheese.
Save some cheese for later.
Place the tray in the oven at 175 degree C (350 F) to bake for 30-40 min. In the last 5 min add the reserved cheese all over the potatoes.

Cake with coconut filling and bicolor sponge cake

This cake with coconut filling and bicolor sponge cake is a very easy dessert, it looks so well and is very very tasty.
I've made a simple batter and I have split it in two parts and one of them colored with cocoa powder and instant coffee. In between this sponge cake add a creamy, tasty and delicious coconut filling.
Keep it in the refrigerator until serve, powder with sugar and serve with family and friends.

Chocolate homemade candy tasty and delicios

Wow, how good this Chocolate homemade candy are, we like it so so much and I think you may like them too so I post the recipe here an my blog. And what I like even more at this recipe is the fact that is very easy to prepare and so so tasty. And on a kids party for a candy bar this candy are delicious.


Ingredients for Chocolate homemade candy
  • 250 gr butter
  • 100 gr peanuts/nuts toasted and unsalted
  • 300 gr sugar
  • 3 eggs
  • 2 tablespoon cocoa powder
  • 200 gr chocolate
  • 100 gr sesame seeds
  • 250 gr biscuits/crackers
Directions
I've started this recipe by crushing the biscuits with the food processor into fine crumbs. The peanuts I've grounded too but not to fine.
Mix the eggs with the sugar until it is creamy yellow.
Put a sauce pan on the stove and melt the butter. Now add the egg mixture and stir on low heat too.
Add the sesame seeds, you can roast them if you prefer.
Add the chocolate to melt, the cocoa powder and the peanuts. When everything is melted and incorporated stop the heat and add the biscuits.
Let it rich the room temperature and after that put it in the refrigerator for a few hours to set.
After setting in the refrigerator the mixture is thickened. All you need now is some water in a bowl to moist your hands and give them balls shape. I use 1 tablespoon measure in order to have it all equals.
Now toss the candy balls in ground biscuits or crushed peanuts or even cocoa powder if you prefer it.
Keep them in the refrigerator until you serve it.

Homemade traditional Romanian cookies

The preparation of this Homemade traditional Romanian cookies was full of memories about my grandma who use to always bake us this delicious biscuits. With just a few inexpensive ingredients she manage to obtain a lot of this cookies, but never enough to satisfy the greedy mouths of her grandchildren.

Ingredients for this Homemade traditional Romanian cookies
  • 200 gr sugar
  • 2 eggs
  • 200 gr lard (pork melted fat) or butter
  • lemon zest
  • vanilla sugar
  • 10 gr baking powder
  • a pinch of salt
  • 480-500 gr flour

To make the dough I've mixed the eggs with a pinch of salt and the vanilla sugar (10 gr) and the caster sugar.
Mix very well until the sugar is almost melted and the color of this mixture is creamy yellow.
Now add the lard or butter at room temperature and of course mix very very well.
Is time to add lemon zest, backing powder and start adding flour gradually, working the dough (kneading) and adding flour until the dough doesn't stick to the hands.
Let the dough for 30 min in the refrigerator.
Now, to form the cookies I use the old manual machine that use to mince meat and a cookie form adapted to this machine, but you can use those cookies press kit

Place the cookies on the baking sheet and bake in the preheated oven at 180 degree C for 10-15 min.
After baking but still hot powder with sugar.
You can store this cookies in covered tins and they become softer and softer.

Apple cake in two colors

Today I thought to show you this simple Apple cake in two colors that combine with so much success two worlds, one of those who like creamy cakes and ones that prefers the freshness of the fruits.
It can be done quickly and doesn’t require baking separate layers of sponge cake, so those who don’t have to mush free time can be satisfied with this cake also.

Ingredients for Apple cake in two colors
Two baked sponge cake sheets
4 eggs
200 gr flour
180 gr melted butter at room temperature
100 gr sugar
10 gr baking powder
Vanilla extract
2 tablespoon cocoa powder + 2 tablespoon milk
Filling
3 apples
Lemon juice
1 teaspoon cinnamon
10 gr vanilla sugar Bourbon

Creamy filling
700 ml milk
60 gr cornstarch
120 gr sugar

First I’ve prepared the Creamy filling, in fact is just a pudding and for this I’ve mixed the sugar and the cornstarch and adding the cold milk.
Put this mixture on the stove, on low heat and stirring continue until thickens. Let it cool down at room temperature.
Wash the apples and remove the core with the seeds and cut it in small pieces. Add lemon juice over the apples in order to keep nice color.
The batter is made very easy.
I have mixed the eggs with a pinch of salt and with the sugar, add the melted butter and vanilla extract or vanilla sugar. Incorporate the baking powder and the flour.
Split the batter in two equal parts and in one of them adds cocoa powder and 2 tablespoon of milk.
Preheat the oven at 170 degree C.
Pour the white batter in the tray (23x33 cm) and bake half way through.
Remove the tray from the oven and add the apples in one layer, sprinkle with cinnamon and vanilla sugar Bourbon, add the pudding in one layer and the cocoa batter.
Bake for 20-25 min until the cocoa batter is baked also.
Let cool, sprinkle with sugar and serve with friends and family.

Spinach stew

Every time I find spinach at the local market I buy a bunch because it is so easy to prepare Spinach stew. It is a very tasty meal and I serve it with polenta made with grounded corn and a fried egg.
Always add fresh dill to this meal to be complete.

Ingredients
1 kg spinach
1 large onion
5 cloves of garlic
2 tablespoon of tomatoes paste
Fresh dill
Salt and pepper to taste
3 tablespoon sunflower oil
50 ml water
Directions
First wash very well the spinach and chop the leaves, the stems I use it for juice.
Chop the onion and the garlic. In the spring, when I find green onion and garlic I use those.
In a large pot add 3 tablespoon of oil and add the onion to cook a bit, but I like to add the garlic and couple tablespoon on water and let it simmer for 5 min.
Place the spinach in the pot and cover with a lid and let it steam.
In a few minutes it will reduce so much because contains so much water.
Add 50 ml water and let it simmer for 15-20 min. Add salt and pepper to taste and the tomatoes paste and lei it simmer for 5 more minutes.
Take it from the stove and add fresh chopped dill.

Autumn Ratatouille

This meal is about the summer in my opinion, is about what the summer has offered to us, so lovely vegetable, colors, tastes and textures, combined simply in one dish.
The french called this meal Ratatouille, in my country is called "Ghiveci" and it means many vegetable combined....anyway you say it is DELICIOUS!!!


Ingredients  for Autumn Ratatouille
2 large eggplants
1 zucchini
2-3 carrots
3 large onions
7 red peppers
3 tomatoes
Fresh parsley
3-4 tablespoon vegetable oil
Salt and pepper to taste
2 bay leaf and dry thyme

I’ve started with the onions, peeled and chopped.  The clean carrots I’ve cut it into rings.




In a large pot add the oil to heat up and add the onions and the carrots. But I didn’t let it fry, I’ve added water to cover it and let it simmer with the lid on.


In the meantime I’ve cut the eggplants and the zucchini into cubes.


The red peppers without the seeds I’ve cut into thin strips.





Add over the cooked onion the peppers, the zucchini and let it sweat a little and add the eggplants too.


A little bit of salt and pepper, the bay leaf and the thyme and also 50 ml of water. Let everything to cook.
The tomatoes I’ve grated and remove the skin and cook to reduce in a different pot.
When the vegetables have been cooked and the sauce is thick and reduced I’ve added the tomatoes and boil for 5 more minutes.


At the end just add the chopped parsley and the meal is ready to be served with pickles or raw beetroot salad.
If you want to preserve this meal for the winter in a large jar, you must add more oil, weight the vegetables and add 50 ml oil per kilo of vegetables, and boil the jars on bain-marie for 40 min.

Chocolate cupcakes

When you need a delicious and good looking dessert, the Chocolate cupcakes in my opinion fit very well in this category. The batter is done quickly, don’t need to much baking, and the icing is a quick one too….so, what else you need?! Colorful and cheerful cupcakes papers and a little bit of skill to decorate them.

Batter

100 gr sugar
2 eggs
7 tablespoon vegetable oil
175 ml milk (3.5% fat)
250 gr flour
2 tablespoon cocoa powder
10 gr baking powder
10 gr vanilla sugar

Icing

200 gr chocolate
200 ml cream
2-3 tablespoon powder sugar
60 gr butter





How I make the batter for 16 cupcakes
In a bowl mix the dry ingredients, the flour, cocoa powder and the baking powder.
In another bowl mix the wet ingredients, the eggs with a pinch of salt and the sugar. Mix until the sugar is dissolved then add the milk and the oil.

Important – preheat the oven at 180 degree C.

Add gradually the dry ingredients in the eggs mixture and stir well.
In the cupcakes tray place first the papers and pour the batter. Don’t fill them all the way up , just ¾.
Bake for 15 min and test them with a tooth pick, if not bake keep them in the oven a few more minutes, but not too much in order to be fluffy and not over dry.






Whip the cream with the powder sugar.
Melt the chocolate and the butter on double boiler and add the whipped cream and stir. Let it cool and keep it in the refrigerator for an hour or two to hardens, place the icing in a piped bag and decorate the cupcakes.


You will have 16 fluffy delicious cupcakes that will make your day a happy one!

Apple pancakes, simple and delicios

I prepare this Apple pancakes when I the morning I don't have to much time do prepare something else much more complicated, or when I don't have to much ingredients to bake another dessert and this one is quick enough to satisfy our sweet tooth.

Ingredients
250 gr flour
500 ml milk
2 eggs
40 gr sugar
1 tablespoon vanilla sugar
a pinch of salt
390 gr grated apples (around 2 apples)
a little bit of vegetable oil
1 teaspoon baking powder

Directions
Mix the eggs with a pinch of salt, sugar and vanilla sugar.
Add in this mixture the flour and the baking powder and stir in the cold milk.
It should look like a runny sour cream.
Wash well the apples and grate them and add them into the mixture and mix.
On the stove, heat up a pan and add 1 teaspoon of oil and with a ladle or a large large tablespoon take from the mixture and pour into the center of the pan.
Let it cook on one side and turn on the other. It will take just a few minutes to cook every pancake on each side, but set the stove on low heat to allow to cook inside.
And repeat until you are done with all the mixture.
Serve warm, simple , with powder sugar or honey.

Homemade wholemeal bread

I bake bread in the winter when is snow and cold outside. The smell of fresh baked bread give my home a homey feeling. So in today's post I will show you how I make  Homemade wholemeal bread and I hope I inspire you to bake one.

Ingredients for 4 Homemade wholemeal bread
1 kg of white flour
1 kg of wholemeal flour
14 gr of dry yeast
mix of seeds (sesame, cumin, pumpkin and flax-seeds)
1 1/2 teaspoon salt
2 tablespoon sugar
100 ml olive oil or sunflower oil
1300 ml warm water

Directions
In a large bowl sift the white four, but don't throw away the large bits of the wholegrain, let it be in the flour mixture.
Add the salt and mix well. I don't put too much salt because we don't eat too salty and the dough can be slow at risen when is added too much.
Add the sugar and the yeast and mix well this dry ingredients.
Start adding water, gradually, mixing until all the flour is incorporated.
Add the oil and knead the dough for about 10 min.
You will feel the different texture of the dough changing when you knead it.
Place it on the table and spread it with your palm and sprinkle the seeds all over the dough, and knead for a couple minute to incorporate the seeds.
Put the dough back in the bowl and cover it with a clean kitchen cloth or a cling film and let it rise until in will be double in size.
After about 30 min or more, depending of how good the yeast is the dough should be risen up and fluffy, split it in 4 equal parts.
I am going to bake 4 breads, 2 in a rectangular tray (for sandwiches) and 2 round ones.
Take a piece of dough spread it on the table, pressing with the palm to flattens and roll it up tightly.
Do the same with another one.
Sprinkle  cumin seeds on top of one and sesame on the other.
With the other two I will make it round shapes so just shape them in two balls.
Sprinkle seeds on this too also.
Let the bread rise again for 30 min and bake them in the preheated oven at 180 degree C for 50 min.
After baking let them cool down before slice them and serve it with butter and some home made jam.



Tree bark cookies

I've bake this Tree bark cookies for the last Christmas, my mom use to bake this cookies for me and my sister when we wore little and I remember how good they are. I thought you might like it too so here they are.
The recipe is simple and the cookies are so tasty and good.



Ingredients for Tree bark cookies
200 gr butter at room temperature
200 ml milk
200 ml vegetable oil
160 g sugar
90 gr ground nuts
zest and juice of one orange
1 egg + 1 egg for greasing on top
10 gr baking powder
10 gr vanilla sugar
cinnamon
a pinch of salt
1 kg flour

Directions
Mix the butter with the sugar, then egg, oil and milk. All liquids must be added gradually.
Add the orange zest and juice and pinch of salt. Knead the flour until will result a compact dough that can be stretched sheet with a thickness of 3 mm.
Take pieces of dough and spread it sheet with thickness of about 2-3 mm. Grease the dough sheet with beaten egg and sprinkle walnuts, sugar and cinnamon, then cut  rectangular strips (1 cm x 7 cm).


These strips are placed on a semi-round shape, I flattened an aluminum tray and with rolling pin I gave this semi-round shape.
Bake the strips in preheated oven at 180 degree C for 20-25 min .
Serve cold with milk, tea or coffee and are delicious.
It keeps fresh for a few days kept in cookies jars.

Pumpkin cheesecake

Today I am baking Pumpkin cheesecake. I am inspired by this awesome autumn, the amazing colors of it and the desserts that we can make in this period. So in this note, my dessert of today is one also with pumpkin that I've baked in the oven for 1 hour with a little bit of sugar on top  and scoop the interior with a tablespoon.

Ingredients for Pumpkin cheesecake

3 eggs
170 gr sugar
150 gr butter
400 gr cream cheese
200 gr biscuits or crackers
200 ml cream
a little bit of vanilla extract
1 tablespoon cinnamon
400 gr pumpkin puree

Directions
First crush the biscuits. I use the food processor to do that, but you can do it with a rolling pin.
Mix the crushed biscuits with the cinnamon and with melted butter.
Use a round tray (22 cm diameter) and press the biscuits mixture in one even layer and place the tray in the refrigerator.
Mix the egg with the sugar until is dissolved and add the cream cheese, vanilla extract, pumpkin puree and the cream. Mix everything together and pour in the tray, over the biscuits base.
Bake in the preheated oven at 170 degree C for 1 hour. Let it cool in the oven.
Decorate with cinnamon.

Baked apples in puff pastry

Baked apples in puff pastry is the easiest dessert that you can make. It taste like apple pie with cinnamon and is the most delicious thing you can make when you are in a hurry and don't have much time but you have a sweet tooth.



Ingredients for 8 Baked apples in puff pastry
8 apples (sour ones and not too big)
a handful of raisins
1 1/2 teaspoon cinnamon
10 gr vanilla sugar
3 tablespoon room temperature butter
1 egg
1 sheet of 450 gr puff pastry
1/2 lemon juice

Directions
In a large bowl pour cold water and squeeze half of  lemon.
Wash the apples and peel them and also remove the core and place them in the lemony water.



Mix the butter with the vanilla sugar, cinnamon and the raisins. You can add more sugar if you prefer it and crushed nuts.



With a rolling pin press a little the pastry dough to stretch a little and cut in 1 cm thick strips, and also cut 16 rectangular (3 cm x 3 cm) shapes.



Take the apples from the water, dry them with a paper towel and taking dough strips roll around the apple and try not to let the apple show.


At the base of the apple place a little square of dough, press it with your fingers, fill the core of the apple with  butter mixture and on top place another square of dough.


Do the same with all the apples and place them on a tray lined with baking paper.
Preheat the oven at 200 degree C.
With the egg brush the apples and after baking will make them look beautiful.


Bake at 200 degree C for 15 min, lower the heat at 180 degree C and bake for another 30 min.



Serve it warm or cold this apples are delicious and is very easy to prepare.

Coffee dessert

Hello, Coffee dessert lovers
Today I have made an amazing dessert with coffee and I invite you to watch the recipe below or to read the recipe...but most I invite you to prepare it too because is DELICIOUS!


Ingredients
Crust/base
8 egg whites
5 yolks
220 gr ground walnuts
100 gr sugar
a pinch of salt
3 packs of 1.8 gr instant coffee

Frosting
250 gr butter
200 gr sugar
3 eggs
100 gr chocolate
100 ml fresh made coffee, sifted so that not have coffee grounds

How I made the crust for this Coffee dessert
Preheat the oven at 180 degree C and line a tray (33 x 33 cm) with baking paper.
Ground the walnuts with your food processor or with the rolling pin until fine crumbs.
Mix the egg whites with a pinch of salt and add the sugar until stiff peaks form.
Incorporate now the yolks and the coffee powder.
Mix in the grounded walnuts.


Pour the batter in the tray an bake for 15 min at 180 degree C, do not remove the tray from the oven after baking, let it cool down for another 15 min.

How I made the frosting
I've boiled the coffee with the sugar to make a thick syrup. Remove from the stove  and mix in the egg yolks while the syrup is still hot, and add the chocolate also. Mix well and let it cool down.
In a large bowl mix the room temperature butter until fluffy and add gradually from the coffee mixture  made earlier until you incorporate all.
Will result a fine, fluffy and tasty frosting.

Assembly the cake
Cut the crust vertically in 3 equal parts.


Place one part on a serving plate face down and remove the baking paper.
Split the frosting in 3 parts also.
Level one part of the frosting on the first crust. Proceed the same with the other two parts and cover everything in frosting.
Decorate with melted white chocolate, coffee beans, cocoa powder...or as you prefer.
Place the dessert in the refrigerator for at least 2 hours before serving.

Homemade quince jam

There is no real autumn without Quince jam and pumpkin pie because I love this two things. When I look on my bedroom window now all I see is rain, dark clouds, wind and cold so my beautiful quince jam cheers me up and it makes my day great.


Ingredients for my Quince jam
4 kg quince
3 apples
10 gr vanilla sugar
the zest from one lemon
juice from 1-2 lemons depending how juicy they are
2 kg sugar
1 liter water

In a large pot pour the sugar and the water and let it boil until the sugar is dissolved and it forms a almost thick syrup.
Wash the lemon in hot water to remove the wax from it surface and grate it.
Extract the juice from the lemons.
Wash well the quinces and the apples and grate them with a large grater and sprinkle lemon juice over them so that doesn't oxidase.
When the syrup is done, turn off the stove heat and add the fruits in the hot syrup. and let it sit for 10 min.
Turn on the stove and simmer at low heat until the syrup thickens up again and the fruits change color and become translucent.
Stir the jam with a wooden spoon from time to time so that the jam doesn't burn.
When the jam is dome add the lemon zest and vanilla sugar and mix.
Pour the hot jam in jar with clean fitted lids and let it cool down.
You can store the quince jam like this all winter in cold pantry.

Half moon cookies

Delicious Half moon cookies ready in a blink of an eye.
I do not know how others are, but me as soon it is cold outside I only think at desserts with dough, desserts that are baked in the oven or let to rise staying near the heater.
These cookies are ready in a few minutes, just mix the ingredients, give the desired shape and bake them in the oven for 12-15 min.You can store them in jar with a lid and will remain tender and soft for a few days.
Here you can watch how I made this Half moon cookies and I wish you could try them to see how soft and good are.


Ingredients for Half moon cookies
220 gr flour
100 gr powder sugar
120 gr lard or butter at room temperature
2 yolks
2 tablespoon milk
a pack of 37 gr vanilla pudding (powder)


Directions
Mix the lard with the egg yolks and the powder sugar
Add the milk into this mixture and the vanilla pudding powder.
It is time to gradually add the flour and knead the dough.
Take a small piece from the dough and roll it with the hands in a long strip 2 cm thick.
Cut it in 7 cm long pieces and shape them in a crescent form.
Proceed in the same way with the rest of the dough.
Place the cookies in a tray lined with baking paper and bake them in the preheated oven at 180 degree C for 12 -15 min.
Remove them from the oven and sprinkle powder sugar over them while are still hot.

Russian Hats

What can I say about this dessert....it's look great, it's taste great, it's made easy....so I like it, and not only me, my family eat this with such a pleasure that I could't believe.


Ingredients for the Russian Hats
Sponge cake
4 eggs
120 gr flour
140 gr sugar
4 tablespoon cocoa powder
8 gr baking powder
6 tablespoon water
Filling
120 gr sugar
500 ml milk
200 gr butter
1 pack (37 gr) vanilla pudding

Glaze
50 gr chocolate
1 teaspoon butter
-----------
coconut flakes



Whisk the egg whites with a pinch salt and add sugar gradually and  mix until a stiff meringue.
Fold 6 tablespoons water gradually, mixing continuing.
Add the egg yolks in the batter.
Baking powder and cocoa mix with flour and sift over egg mixture.
Mix everything easily with slow movements from the bottom up.
Pour batter into a baking tray (23 x 33 cm), lined with baking paper and bake  in preheated oven at 180 C for 20 min.
From baked and cooled cake cut out discs with a diameter of 4-5 cm.
Filling
Mix the sugar with the pudding powder and cold milk and place over low heat and stir continuously until thick, and let it cool down.
With the electric mixer stir the butter, at room temperature, and add gradually cooled pudding.
Assembling cakes
Each disc cut out of the sponge cake cut it in half, put the filling in between and spread on the sides also and roll into the coconut flakes.
Store  the cakes  in the refrigerator until the glaze is preparing by melting chocolate and butter over low heat and with this glaze the cakes on top.

Homemade chicken liver pate

My mom use to make this Homemade chicken liver pate when I was just a kid and I remember  how good and tasty was and had nothing in common with that thing that is sold in the store in tin or aluminium box, and on top it is so easy to make .
So here it is!



For this easy and so much tastier recipe I will use
500 gr chicken liver
100 gr butter
1 tablespoon mustard
1 small onion
salt and pepper to taste
milk
Optional: garlic, paprika, tomato paste
Wash the liver very well quite in a few waters in cold water to remove blood and put it to boil in milk for 20 min. If you use cow or pork liver boil it much longer.
Remove the liver from the milk onto a plate, and if you use the cow or pork one cut it in fine strips.
In a frying pan add a bit of butter (50 gr) and cook the liver to get a little bit of color. When is almost ready add the chopped onion and let it cook for a few minutes, until the onion softens..
Take the liver and the onion fro the pan and let it cool for a couple of minutes.
Now is time to blend everything using a blender or a food processor until you get a very fine and smooth paste.
Add the butter, mustard, salt and pepper and blend again.
You can add a clove of garlic and paprika if you prefer, I will kip it simple but make sure to store it in a recipient with a lid. If you like not to oxidase at all smear  on the surface some butter and store it in the refrigerator a few days.

Cake with nuts and orange frosting

I come back today with the recipe of this cake that I've bake for New Year Eve, Cake with nuts and orange frosting, my family loved it and I thought you might as well. So here I am with the video recipe for this homemade cake and you can find down below the ingredients and all the steps that you need in order to prepare this cake.



Ingredients
Sponge cake
9 egg whites
300 gr roasted nuts
a pinch of salt
80 gr flour
225 gr sugar
zest from a lemon
1 tablespoon lemon juice
1 teaspoon baking soda
1 sachet (10 gr) vanilla sugar
Frosting
9 yolks
a pinch of salt
300 gr butter
225 gr sugar
vanilla extract
orange zest
fresh juice from 6 oranges (aprox 350 ml fresh juice)
Syrup
100 ml water
100 gr sugar
2 oranges - sliced and can be used for decoration







Sponge cake
- Walnuts baked in the oven chop them with food processor and mix with flour and baking soda
- Whisk the egg whites with a pinch of salt and with the caster sugar and the vanilla, added gradually
- In the stiff meringue add lemon zest and lemon juice for it to remain firm
- Incorporate dry ingredients into the meringue and combine slowly in three stages
- Preheat oven to 180 gr C and prepare the cake tray (pan diameter 22 cm) coat the base with baking paper and brush edges with butter
- Pour batter into tray and bake in hot oven for 40-45 minutes, enough to pass the test with toothpick, and let it cool in oven
- When the sponge cake is completely cooled can be slice into two or three parts/sliced.

Frosting
-Squeeze oranges from juice, and take the zest from one of them
- Mix the yolks with a pinch of salt and sugar on hot steam bath
- Stir continuously until the sugar almost is dissolved
- Add orange zest, vanilla and fresh squeezed orange juice
- Continue mixing until the mixture thicken slightly, and if it coat the spoon and trace a line the with one finger and the edges remain separate, the frosting is ready.
- Take it off the heat and let it come to room temperature
- Cream the butter and add the egg mixture gradually, one spoon at the time, until the two are completely mixed
-  kept it in the refrigerator until the cake is ready to assembly

Syrup
- Boil together water and sugar
- Oranges cut into thin slices after they were washed and boil in the syrup until tender
- Cool it down before use

Assembling the cake
- The frosting sits between the sheets of cake, and dress the cake in the same delicious frosting
- Moist the sheets of cake with cooled syrup
- I decorated the cake with ground nuts and orange slices cooked in syrup
- Keep the cake in the refrigerator at least 3 hours before being served

Vanilla and berry's cake

Vanilla and berry's cake looks delicious and most important was delicious. I had gust in the previous weekend and everybody loved it. It is easy to prepare, you don't have to bake anything because I've use sweet crackers, but you must keep it in the refrigerator until the next day in order to be able to slice it properly and to keep it's shape.



Filling 
1 liter milk
160 gr sugar
5 tablespoon cornstarch (aprox.  60 gr) + 1 tablespoon flour
10 gr vanilla sugar
vanilla extract
200 gr butter
Assembly: crackers and berry mix
Decoration: 400 gr cream, 2-3 tablespoon powder sugar, berry mix


In sauce pan mix the cornstarch, the flour and the sugar and add the cold milk and stir it well. Cook it on the stove, on low heat and continue staring until thickens up. Now add the vanilla sugar. And let it cool at room temperature.
Mix room temperature butter and add gradually one table spoon at a time from the mixture prepared earlier. Add some vanilla extract for more vanilla flavor And the filling is ready.

In a tray like this coated with clear film add a layer of sweet crackers and if needed cut some in smaller pieces to fit the tray and to cover the entire surface.
The tray is 30 cm long and 12 cm wide.
Over the layer pf biscuits add a few tablespoon of filling and level it and again with the biscuits/crackers.
When I reach the middle of the tray I've put the frozen berry's and again filling and crackers until I finish the  filling and I filled the tray, but make sure you end it with a layer of crackers.
Cover everything with the clear film and put the cake in the refrigerator until the next day.
It is important this step because in this time the crackers will soften, will absorb moisture from the filling, and the filling will be more thick and the cake can be portioned easily and will keep the shape.



I've decorate the cake with whipped cream and again frozen berry's.
