Homemade Ladyfingers

Very easy to prepare and delicious delicacy with hot chocolate, coffee or tea.


140 gr sugar split in two equals parts
5 eggs
120 gr flour
vanilla extract
a pinch of salt
1 teaspoon lemon juice
50-60 powder sugar

Preheat the oven at 200 degree Celsius
Mix the yolks with 70 gr of sugar, until pale yellow and  creamy, add the vanilla extract for more flavor.
Sift the flour over the yolks, but don't mix yet.

Beat the whites with a pinch of salt and the lemon juice, until stiff peaks, add the rest of 70 gr of sugar, and beat until glossy.

With a spatula, mix the whites with the yolks mixture, without over steering.

Butter a tray and line with baking paper, put the batter in the piping bag and form the Ladyfingers in the tray, about 8 cm long and 2 cm wide, with some space between them.

Sift powder sugar over them and bake until firm to the touch, about 7-8 min.

After bake, sift powder sugar again, and remove them from the tray.

Serve them with tea, coffee, hot chocolate or with a glass of champagne at a special occasion.
